  • 4 cups fresh carrots, chopped
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp ground turmeric
  • 1 cup canned coconut milk
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion and minced garlic until fragrant (about 5 minutes).
  2. Add the chopped carrots to the pot and stir occasionally until they soften.
  3. Sprinkle in the cumin, coriander, and turmeric; cook for an additional 2 minutes.
  4. Pour in vegetable broth and bring to a simmer. Cook until carrots are tender (about 15 minutes).
  5. Blend the soup until smooth using an immersion blender or transfer to a blender in batches.
  6. Stir in coconut milk and let it simmer gently for another 5 minutes before serving.
