  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz elbow macaroni
  • 6 tbsp unsalted butter (3 for chicken, 3 for sauce)
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1 cup shredded cheddar cheese
  • 1 tbsp low-sodium soy sauce
  • 1/4 cup honey
  • 1 tsp cayenne pepper
  • Fresh garlic, to taste (about 2 cloves)

Instructions

  1. Preheat oven to 350°F (175°C). Chop chicken into bite-sized pieces, seasoning with salt and pepper.
  2. Cook elbow macaroni in salted boiling water until al dente. Drain and set aside.
  3. In a skillet over medium heat, melt butter and sauté chicken until golden brown (5-7 minutes).
  4. In another pot, melt remaining butter for the sauce. Stir in flour to create a roux, cooking until light golden brown.
  5. Gradually whisk in milk until thickened. Stir in cheese until melted, then add soy sauce, honey, and cayenne.
  6. Combine pasta and sautéed chicken with the cheese sauce. Transfer to a baking dish and bake for about 20 minutes until bubbly.
