  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1/2 cup pure maple syrup
  • 1 cup full-fat coconut milk
  • 1 cup jasmine rice
  • 1 tsp red chili flakes (adjust to taste)
  • Juice of 1 lime
  • 2 green onions, chopped
  • 2 tbsp low-sodium soy sauce
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping garlic and cutting chicken into bite-sized pieces.
  2. Marinate the chicken in a mixture of garlic, maple syrup, soy sauce, lime juice, salt, pepper, and chili flakes for at least 30 minutes.
  3. Rinse jasmine rice until water runs clear. Cook in a pot with equal parts coconut milk and water until fluffy.
  4. Sear marinated chicken in a skillet over medium-high heat for 6-8 minutes until golden brown.
  5. Pour remaining marinade into the skillet and simmer for about 5 minutes until thickened.
