Ingredients

  • 1 cup almond flour
  • 1 ½ cups powdered sugar
  • 3 large egg whites (room temperature)
  • ¼ cup granulated sugar
  • Gel food coloring (as desired)
  • 1 tsp vanilla extract
  • Buttercream filling (prepared using your favorite recipe)

Instructions

  1. Preheat oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. Sift almond flour and powdered sugar together twice in a bowl.
  3. In a clean bowl, whip egg whites until frothy, gradually adding granulated sugar until stiff peaks form.
  4. Gently fold the dry mixture into the whipped egg whites, adding food coloring until desired hue is achieved.
  5. Transfer batter to a piping bag and pipe small circles onto prepared baking sheets, tapping gently to release air bubbles.
  6. Bake for 15-20 minutes until macarons develop a 'foot.' Cool completely before removing from sheets.
  7. Pipe buttercream filling onto half of the shells and sandwich with remaining shells.
