Ingredients

Scale
  • 16 oz cream cheese (full-fat)
  • 1 cup granulated sugar
  • 2 cups fresh strawberries (sliced)
  • 2 tbsp matcha powder (high-quality)
  • 3 large eggs (fresh)
  • 1 tsp vanilla extract (pure)
  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter (melted)

Instructions

  1. Preheat your oven to 400°F (200°C) and line an 8-inch springform pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of the prepared pan to form the crust.
  3. In a large mixing bowl, beat cream cheese until smooth. Gradually add sugar, then mix in eggs one at a time until well incorporated.
  4. Gently fold in matcha powder and vanilla extract until evenly mixed, being careful not to overmix.
  5. Pour the cheesecake batter over the crust and smooth out the surface. Bake for 25-30 minutes until edges are set but center is slightly jiggly.
  6. Allow cheesecake to cool at room temperature before refrigerating for at least four hours or overnight. Top with sliced strawberries before serving.
