  • 1 cup mini marshmallows (about 100g)
  • ½ cup chopped pecans (about 60g)
  • 1 tsp ground cinnamon
  • 2 tbsp unsalted butter, melted
  • ¼ cup light brown sugar (about 50g)

Instructions

  1. Boil the cubed sweet potatoes in water for 15-20 minutes until fork-tender. Drain well.
  2. In a mixing bowl, mash the sweet potatoes until smooth. Mix in melted butter and brown sugar until fully combined.
  3. Stir in ground cinnamon and chopped pecans.
  4. Preheat oven to 375°F (190°C). Form the mixture into bite-sized balls or patties and place on a greased baking sheet.
  5. Top each bite with mini marshmallows and bake for 10-15 minutes until marshmallows are golden brown.
