- 1 cup mini marshmallows (about 100g)

- 1 tsp ground cinnamon
- 2 tbsp unsalted butter, melted
- ¼ cup light brown sugar (about 50g)
Instructions
- Boil the cubed sweet potatoes in water for 15-20 minutes until fork-tender. Drain well.
- In a mixing bowl, mash the sweet potatoes until smooth. Mix in melted butter and brown sugar until fully combined.
- Stir in ground cinnamon and chopped pecans.
- Preheat oven to 375°F (190°C). Form the mixture into bite-sized balls or patties and place on a greased baking sheet.
- Top each bite with mini marshmallows and bake for 10-15 minutes until marshmallows are golden brown.
