- 2 medium sweet potatoes (about 1 lb), cubed
- 2 tbsp fresh lemon juice
- 3 tbsp extra virgin olive oil

Instructions

- Bake for 25–30 minutes until chicken reaches an internal temperature of 165°F (75°C) and sweet potatoes are tender.
