  • 1 lb lean ground beef
  • 1 oz taco seasoning
  • 14.5 oz can diced tomatoes
  • 15 oz can black beans, rinsed and drained
  • 2 cups shredded cheese (cheddar and Monterey Jack mix)
  • Sour cream for serving

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Cook pasta according to package instructions until al dente; drain.
  3. In a skillet over medium heat, brown ground beef until cooked through. Drain fat and stir in taco seasoning and diced tomatoes; simmer for 5 minutes.
  4. In a large bowl, combine cooked pasta, beef mixture, and black beans; mix well.
