  • 4 turkey legs (about 2 pounds total)
  • 2 tbsp olive oil
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 2 tbsp brown sugar
  • For the Brine: 8 cups water
  • 1/2 cup sugar
  • 1/4 cup kosher salt
  • Optional: Fresh herbs (rosemary or thyme)

Instructions

  1. In a large bowl, combine water, sugar, and salt until dissolved to create the brine. Submerge turkey legs in brine; refrigerate for at least four hours, preferably overnight.
  2. Preheat your Traeger grill to smoke mode at 180°F.
  3. Remove turkey legs from brine and pat dry with paper towels. Rub olive oil over them and season with salt, pepper, garlic powder, smoked paprika, and brown sugar.
  4. Place seasoned turkey legs on the grill grates and smoke for 2 to 3 hours until the internal temperature reaches 165°F.
  5. Increase grill temperature to 375°F and cook for an additional 20 minutes for crispy skin.
  6. Let turkey legs rest for about ten minutes before serving.
